What is towing capacity?

It is the heaviest trailer, fully loaded, that the manufacturer says a vehicle may pull. It is set per configuration: the same model can have very different ratings depending on engine, cab, drive, axle ratio and towing package.

Why does one truck have so many different ratings?

Because the limit depends on how the truck was built. Manufacturers publish a table with a row for each combination of engine, cab, bed, drive and axle. The figure in adverts is the highest row in that table.

What is GCWR?

Gross combined weight rating: the most the loaded vehicle and the loaded trailer may weigh together. People and cargo in the vehicle count toward it, so a heavily loaded truck can tow less than its trailer rating suggests.

Is towing capacity the same as payload?

No. Payload is the weight the vehicle itself can carry: people, cargo and the downward weight of the trailer on the hitch. Towing capacity is the weight of the trailer being pulled. Both limits apply at the same time.
